Each Mazzer coffee grinder model is designed and developed together with its burrs, in order to achieve the best performances. It is for this reason that original burrs should only be used to ensure that the grinding quality remains at the highest level over time. The burrs have been designed to ensure an optimal particle size distribution for the various coffee extraction methods.

Mazzer recommends cleaning the coffee grinder on a frequent basis, even daily or, once a week at the very least. In fact, the ground coffee in the grinding chamber, chutes and doser, oxidises rapidly and the oil that is naturally released can make the beverage taste slightly rancid, if not removed on a regular basis.
You can clean it with just a brush, or preferably even a vacuum cleaner or dry cloth. Never use water or other products such as cleaners or abrasives.
The parallel flush-set burrs are factory-guaranteed, as long as the burrs are replaced with original Mazzer burrs and the burr holders have not been knocked or damaged. For this reason, we recommend that you never overtighten the burr-securing screws, so as to avoid having to use hammers or screwdrivers to remove them at a later date. If these tools are used, they can cause the burr holders to incline, in turn compromising the correct final parallel positions of the burrs. The burrs and grinding chamber must be kept clean and it is necessary to ensure that the burr holder that the burr rests on, is fully cleaned.
Mazzer burrs do not need to be “broken in” as they are ready for use. When they are first installed, grind some coffee doses in order to ensure that they are working correctly. Do not use these first doses to brew coffee.
If the motor rotates but the coffee does not come out or it comes out with difficulty, you may have inadvertently ground the coffee too finely and obstructed the burr’s outlet holes. We recommend turning the ring nut 2 numbers towards the coarser grind setting, until the flow is regularised (for the Kold and Kold S models, we suggest a one and a half-turn towards the coarser grind setting). Then proceed to find the correct grind size. If the problem persists, we recommend cleaning the grinding chamber and its outlet chute.
Mazzer burrs cannot be resharpened. We strongly advise against any tampering (heat treatments, surface treatments and coatings, etc.).

The barista usually chooses whether to use an appliance with flat or conical burrs, based on the premises’ workload, potential peaks, personal preferences and the characteristics of the coffee used (origins and roasting profile). Whilst the conical burrs rotate at a lower speed than the flat burrs, they can achieve higher productivity levels than those of flat burrs with the same diameter. Due to the low grinding speed, the conical appliances ensure greater acoustic comfort. Furthermore, conical burrs wear much more slowly than flat burrs, which in turn, reduces the frequency of maintenance work. Appliances with flat burrs offer greater reactivity to the adjustment change, due to the more compact grinding chamber. The choice between flat and conical is up to you. Mazzer is committed to offering a wide range of choice, so that every barista can find the ideal product for their coffee.
Each time that the burrs are replaced, the correct grain size must be set on the appliance. In the table below, we suggest the main adjustments, according to the appliance model. It is an indicative reference that will need to be adapted to your own coffee type (adjustment range calculated based on a standard Italian espresso with an extraction time of 20-30”).

Once the burrs have been changed, we recommend opening the grinding collar 5 notches away from the point of contact of the burrs (found when the motor is off) and grinding 5/6 g of coffee, in order to check that the operation has been successfully completed and to ensure that the burrs are parallel. The resulting ground coffee should have similar characteristics to talcum powder, i.e. a very fine homogeneous particle (be careful not to grind too much coffee at this adjustment point because you risk clogging up the burrs). After this check has been completed, the appliance can be adjusted to the espresso grain size. Please refer to the adjustment table
Once the new burrs have been installed, we recommend thoroughly cleaning the adjustment ring’s thread and counter-thread. Apply a small amount of oil or vegetable fat to the thread and try to screw the adjustment ring without the upper burr holder until it reaches the end, in order to evenly distribute the lubricant and ensure that the component slides correctly. Once this has been completed, the upper burr holder assembly and adjustment ring can be tested. Make sure that all the springs are in place before closing the appliance back up.
After the appliance has been cleaned, yet before the grain size is adjusted, make sure that the grinding chamber and chute have been completely filled with coffee: the grain size will only correspond to that adjustment point if these are full. The first doses ground into an empty chamber, will have a significantly coarser grain size than the doses obtained when the appliance is fully operational.
Whenever the burrs are changed, ground a few coffee doses. Do not use these initial ground doses to brew coffee.
